1.2kg pumpkin or butternut squash (unpeeled weight)
1x brown onion, roughly sliced
2 whole garlic cloves, peeled
3 cups (750ml) vegetable stock
1 cup (250ml) water
Salt & pepper to taste
1 cup full fat coconut milk or cream (from a can not carton)
Cut the pumpkin or squash into 2 inch chunks. Remove the skin and seeds.
Place the pumpkin / squash, onion, garlic, stock and water in a large pot. Bring to the boil and then reduce to a simmer and cook uncovered until the pumpkin is easily pierced with a knife. This should take about 10 minutes from boiling.
Remove from heat and carefully scoop the contents into your MOD Blend Pro. Secure the lid and blend using the touch slide until a smooth and creamy soup is formed.
Pour the soup back into the pot and season to taste with salt and pepper. Stir through the coconut cream.
Divide the soup between bowls and drizzle with an extra helping of coconut cream. Serve with your favourite bread if desired.
