Directions
Soak the almonds overnight in water (for at least 12 hours) and drain;
Take 3.5 cups of filtered water and add a small pinch of salt and vanilla extract (if using), mix together;
Turn your MOD Cold Press Juicer on and add a quarter of the soaked almonds, followed by a quarter of the water;
Continue alternating soaked almonds with water until all added;
Waste from the nuts will begin appear in the pulp chute;
Open the juice tap to let your tasty, fresh nut milk flow;
Store in a glass jar in your refrigerator for up to 3 days.
Recipe Note
You can even try this with other nuts like cashews, macadamia and hazelnuts.
It will stay fresh for up to 3 days. Any leftover can be frozen into ice cubes and added to smoothies, soups or your morning oatmeal.
How to use the leftover almond pulp
One of the best perks about making almond milk in your MOD Cold Press is the dryness of the pulp that is leftover. This can be repurposed into almond meal and used in baking or used in cooking to crumb fish or chicken.
When I am making almond milk regularly, I store the leftover almond milk in a large container in the freezer until the container is full. I then leave it on the bench to defrost, spread it out on baking tray lined with baking paper and pop into an oven set on its lowest temperature for the day. When I go to bed, I turn the oven off and leave the almond pulp in there overnight or until bone dry. Once dry, pop into a sealed glass jar and keep in your pantry until ready to use. You are basically getting almond meal for free.
