Ingredients
Pancakes
1 cup of oat flour (you can make this yourself just by blending up rolled oats in your MOD Blend Pro!)
1/2 cup pure pumpkin purée
1 tbsp baking powder
1 tbsp pumpkin pie spice (or make your own using 1 tsp of nutmeg, cinnamon and ginger)
1 tbsp maple syrup
1.25 cups plant milk
1 tbsp coconut oil
Protein Icing
1/3 cup vegan yogurt
1/2 scoop vanilla protein powder
Sautéed Apples
1 apple chopped
1/2 tbsp of coconut oil
1/4 tsp of cinnamon
1 tbsp of water
1 tsp maple syrup
1/8 tsp of vanilla extract
1 pinch of sea salt
Directions
Pancakes
Measure out all your dry ingredients and add them to your MOD Blend Pro.
Add the pumpkin puree, maple syrup, plant milk.
Blend all ingredients using the slider. Blend for 1-2 minutes or until well combined. Let the mixture sit for a few minutes.
Add a small amount of coconut oil to a pan. Melt over medium heat. Add more as needed.
Pour your batter in the pan, making your pancakes as small or large as you like. Fry and flip until golden on both sides.
Sautéed Apples
Cut up your apple into bite sized pieces.
Place apple in a saucepan with 1 tbsp of water.
Cover the pan and cook over medium heat for about 5 minutes, stirring occasionally. Continue until the apple pieces become very soft.
Add maple syrup, cinnamon, salt and vanilla. Stir until well mixed.
Cook for up to 5 more minutes until apples are soft and coated. Remove from heat.
Protein Icing
In a small bowl combine vegan yogurt and protein powder. Mix until it forms a thick icing-like consistency.
Recipe Note
You can begin sautéing your apples while your pancakes cook and prepare the protein icing in advance. When your pancakes are cooked add the icing and apples on top. You can also add additional toppings including mini chocolate chips, your favorite nut butter, nuts and seeds. Serve warm and drizzle with maple syrup.
